Yes, desserts can be healthy too – at least eye healthy! Here are several recipes, courtesy of Eye Care America that are both yummy and great for your eyes!
Papaya Coconut Parfait
Easy and delicious, papaya provides lutein and zeaxanthin. Serves 4.
Ingredients:
2 cups ripe papaya pureed
4 T sugar
2 T honey
½ T lemon zest
½ T toasted coconut flakes
1 cup cream, whipped
Directions: Mash papaya with the sugar, honey and lemon zest. Using a spatula fold in whipped cream. Fill 4 martini glasses and top with toasted coconut.
Chill for 30 minutes before serving.
Cantaloupe Dessert Soup
Festive cold soup rich in Vitamin A.
Ingredients:
1 cantaloupe cleaned, peeled and cut into 1 inch cubes
½ cup sugar
1 bottle of champagne
Sprigs of mint
Pinch of kosher salt
Dash of lime juice
1 T canola oil
Directions: Heat oil in a heavy pot and add cantaloupe, sauté for 1 minute. Add sugar, ½ bottle of the champagne and turn off the heat. Add salt, lemon juice and puree in a blender.
Chill and serve with mint.
Simple Lemon Filling
Ingredients
8 T fresh lemon juice
¾ cup sugar
4 eggs
1 cup cream
Lemon zest
Directions: Combine all ingredients and mix well. Pour into a pie crust and bake 40 minutes. Serve with berries.
